Grilled Vegetarian Skewers

Serves:8
Preparation Time: 30 mins
Marinating Time: Overnight
Cooking Time: 15 mins

Ingredients:
  • 2 bell peppers (1 red and 1 yellow), cut into 1 inch chunks 
  • 1 capsicum, cut into 1 inch chunks 
  • 2 small eggplants, cut into 1 inch chunks
  • 10 button mushrooms
  • 2 medium white onions, peeled and cut into 1 inch chunks 
  • 15 cherry tomatoes
  • 1 bowl of fetta cheese cut into 1 inch chunks 
  • 1/4 cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon rosemary
  • 1 teaspoon oregano
  • 5 cloves garlic, ground into a paste
  • 3 tablespoons olive oil
  • salt to taste
  • cracked pepper to taste 

Method:

  •  If you have wooden skewers, soak them in water for 2 hours to avoid them flaking off when cooking. It is preferred that you use metal skewers.
  • Combine the balsamic vinegar, dijon mustard, rosemary, oregano, garlic, olive oil, salt and pepper in bowl. Whist until well combined.
  • Put all the veggies in a big salad bowl and pour the marinade over them. Toss well.
  • Cover the salad bowl and leave in your fridge overnight.
  •  When you're ready to grill them, pre-heat a non-stick pan or BBQ grill while you put in all the veggies in the skewers in any order you like but maintain a consistent pattern.
  • Grill each skewer for about 12 mins, turning sides every 3 mins to ensure that all 4 sides of the veggies are cooked well.
  • Serve hot and enjoy!!

Vegetarian Mee Goreng

Total Cooking Time: 10 minutes
Serves: 2

Ingredients:
- 2 spring onions, finely chopped
- 1/2 cup of egg noodles
- 1 red onion, sliced
- 1 Julienne carrot
- 1 red capsicum, sliced
- A few brocolli florets, boiled for 5 minutes.
- 1 Tbsp of crushed garlic
- 1/2 cup of bean sprouts
- 5 mushrooms, sliced
- 1 bunch of choy sum, roughly chopped
- 2 Tbsp of oil
- 2 shallots, finely chopped
- Salt and pepper to taste
- 2 tbsp sweet soy sauce (or normal soy sauce with a pinch of sugar)
- 1-2 tbsp sambal sauce

Method:
Fry the shallots in oil first, and place them on a kitchen towel to drain the oil and leave them for garnishing.

Drain and set the noodles. Fry the garlic in oil on medium heat for 30 seconds, add in the onions and cook till brown. Add in the spring onions and cook for 1 minute. Add in all the remaining vegetables and cook for 5 minutes in medium heat. Add in the noodles and cook for 2 minutes. Add in the sweet soy sauce, salt and pepper to taste and sambal sauce as per your liking. Cook for one further minute, garnish with the shallots and serve. Bon Appetite!

5 minute Chocolate Mug Cake

Time: 10 minutes
Serves: 1

Ingredients:
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 ladle of milk
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug

Method:

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT!

Bean Tacos

Total Cooking Time: 40 minutes
Serves: 4

Ingredients:
- 1 can of beans in tomato sauce
- Mexican taco seasoning from your local supermarket
- Salsa sauce from your local supermarket
- 1 finely chopped onion
- 3 finely chopped tomatoes
- 1 tbsp of crushed garlic
- 1 cup of Cheddar cheese
- 3 taco shells
- 1 cup of shreded lettuce
- A bit of oil to fry the garlic
- Salt, Pepper and Paprika to season


Method:

Add the oil in a saucepan and fry the garlic. Add in the onions and cook until brown. Carefully add in the tomatoes and allow them to cook for 10 minutes on medium heat. Meanwhile, put the beans in tomato sauce in a sieve and wash them to get rid of the excess tomato sauce. Add in the beans and season well with salt, pepper and paprika. Add in the mexican seasoning. Let it cook for 15 minutes on medium heat.
To assemble, put the beans in a taco shell, top with salsa sauce, lettuce and cheese. Voila!
